  1. In a large pot, heat olive oil on medium-high heat.
  2. Saute the onions and shallots until translucent and fragrant.
  3. Add the butternut squash and water to the pot. Cover and bring to a boil.
  4. Reduce heat to low and simmer for about 20 minutes until the butternut is fork tender.
  5. Use a hand blender to blend butternut squash into a smooth and thick sauce. Add a little water if you prefer a thinner consistency.
  6. Toss gluten-free pasta in the sauce and serve while hot.
Recipe Notes

Freeze sauce in an airtight container. Defrost and warm up in a saucepan when ready to consume.
