I love occasions that allow me to pamper my loved ones with rich and sweet treats, but I always aim to find the right balance between indulgence and nutrition. Food must always be delicious and free-from my son’s allergens, but it’s equally important that my family eats heart healthy food made with whole ingredients that are low in fat and free from preservatives and artificial colors.

Coconut and Strawberry Shortcake Parfait

Every layer in this dessert is a delicious flavor burst, and can be made with many heart healthy options. The crowning layer of this parfait is a perfectly free™ cocoa and vanilla frozen bite.

Start with a base layer of unsweetened coconut yogurt mixed with a drop of vanilla extract and lightly sweetened with maple syrup or honey.

Follow with a crunchy cake layer that can be made with allergy-friendly cereal or oats mixed with seeds and crumbled gluten-free shortbread cookies.

Blanket with a layer of sliced fresh strawberries and top with a creamy layer of coconut whipped cream. Many grocery stores carry coconut whipped cream, but you can make your own by refrigerating a can of full fat coconut milk for at least 4 hours and disposing the coconut water. Whisk the leftover coconut cream with a cup of powdered sugar until peaks form.
